Smith began cooking in kitchens while attending art school at the age of seventeen. Within five years, he had risen to the position of Head Chef at a large, upscale bistro. He then attended The Culinary Institute of America, where he graduated second in his class. Smith worked in Michelin-starred restaurants in Europe, as well as kitchens in South Africa, the Caribbean, and New York City after graduation. Smith moved to Prince Edward Island with the intention of cooking sustainably by planting a garden and forming relationships with local farmers and fishermen. Smith began working at The Inn at Bay Fortune in 1991. The Inn Chef (1998), his first television show, was shot on location at the Inn and throughout Nova Scotia and Prince Edward Island.
